Hover the mouse over the 7 vertical dots (2 rows, 4, then 3) at the right end of the quick launch bar.  The mouse will turn to a horizontal bar with arrowheads at either end.  Left click and drag the dots to the right until the quick launch bar is as long as you need it to be.  YOu can left click and drag icons off your desktop to the quick launch bar.
