Hi Tom,

I use Outlook 2002, if yours is different then the settings may be
different.

In the main window Go to Tools -> Options.
In the Mail Format tab, click "Fonts".
Change the font for the action(s) you want.

Note that if you use Plain Text to send emails, these settings are for your
display only, the font information is not part of the reply you send.

I use MS Outlook and don't seem to be able to change the automatic font that
is used when replying to emails. It's most likely somethig very simple, I
just haven't found it yet.
