Try checking the resolution that you are scanning at.  Your screen has a
resolution of about 75 dpi [dots per inch] and your printer prints at
somewhere between 150 and 600 dpi.  If you scan a document at 1200 dpi, and
your printer works at 300 dpi, then an 8x11 scann will be roughly 16 pages
worth of print.  You should be able to resize the scanned image with your
scanners software to the appropriate size.  Typically this is under an image
size or canvas size menu option in the software.
