This is only a semi-educated guess but I'd assume that the audio data is entering the computer via the ribbon cable along with all the other information, the same way as it does with any other IDE device, like hard drives, zip drives etc.
The purpose of the dedicated audio cable is probably to channel specific audio signals to the specialized sound processing chip, which is usually very close to the motherboard end of the audio cable.

I don't have a sound cable between my CD/RW drive and sound card yet I can record and play sound just fine. I can understand why I can record sound but don't understand how it plays sound. Is there another path for audio from the CD to get to the sound card?
