In Word 2000 there are two "Print" commands, with and without dialog
boxes.  I have my printer to default to print in Grey Scale mode but
change it when I want to print in Color mode.  What I've done is
create a second "print" button on my toolbar that points to "Print..."
command instead of the "Print" command.  The Print... command brings
up the print dialog command which has the Properties button ready to
press and make my changes.

I've also tried with some success on some printers to Add a second
printer in the Printer folder that pointed to the same printer but
with the properties different (one with it's properties set to Grey
scale and the other to Color).  Name them differently. Then go to
File/Print (or a button on the toolbar for "Print...") and in the
dialog box change the printer to the desired "Property set" you want.
