Steve,

The method you suggest would work.

I use a variation of it whenever I need to replace a smaller
capacity hard drive with a larger one in an existing system.

First I back up everything on the old hard drive to tape.

Second I use Drive Copy (commercial software) to copy everything
on the old hard drive to the new larger capacity one. Other programs,
such as Ghost, can also do this.

After setting the hard drive jumpers to the correct configuration,
I'm done. Unless something goes wrong during the copying process.
In that case, I reformat the new hard drive. Then copy everything
from the tape cartridge to the new hard drive.

The only time I exclusively use the external tape drive (tape
cartridge) method is when I want to get rid of something
on the old hard drive. Such as Drive Space or Disk Manager
if no longer needed.
