  Basically, yes.  I have plugged and unplugged hundreds, if not
thousands, of UTP/Cat5 connections without ever damaging a piece of
equipment.
  You *may* lose your "logged in" connection -- depending on the
details, you *might* need to reboot to reconnect.  But that's about
it.
