You can find a lot of information on MP3 from www.mp3.com.

(1) No simple answer. Check www.adaptec.com and the company unofficially
modulated a cd-r mailing list. Also check newsgroups like
comp.publish.cd-rom.hardware, comp.publish.cd-rom.software.
(2) http://www.mp3.com/software/ has a full list and descriptions. Same
site for your question 3 to 4 and 5. I have tried Adaptec Easy CD Creator
and Xing audioCatalyst with success.
(3) audioCatalyst is pretty good in that it can directly encode MP3 from
CD, and I like its variable bitrate for high quality music. Xing MPEG
Encoder can do MP3 too.
(4) A lot of them. winamp, musicmatch jukebox...
(5) Same as (1)
