What categories CAN you see?

The main ones (at least in Award and AMI BIOSes) are typically:

* Standard CMOS
* BIOS Features
* Chipset
* Peripheral
* Power Management
* PNP/PCI

Also, take a look at the BIOS survival guide, it's very comprehensive.
