Strictly speaking, osteoarthritis is indeed an inflammatory disorder:-

Osteoarthritis is made worse by the introduction of  inflammatory advanced glycation end products, which are created by cooking:-

So, osteoarthritis is indeed linked to diet but eating cooked grains or cooked-palaeo won't help  as cooking creates the advanced glycation end products that make osteoarthritis worse. Eating rawpalaeo  won't get rid of osteoarthritis completely either,  but the lack of advanced glycation end products in a healthy, rawpalaeolithic diet will lessen symptoms considerably as that will lead to less inflammation in the diet:-

If you can't handle going rawpalaeo, certain methods such as cooking entirely in moisture or cooking at much lower temperatures will reduce the production of advanced glycation end products in the cooked foods somewhat, and therefore reduce the symptoms of osteoarthritis a little bit:-
