They probably hunted all game animals in every season of the
year........and knew the animals were fattest in the Fall.....so
in cold climates they would be hunting more in order to lay
by a supply of fat and dried/smoked meat for the Winter.

Spoilage....again, I doubt this was a problem for our paleo
ancestors......they - like modern HG's - ate meat at a
stage of ripeness that we "civilized" people consider
spoiled..........in cold climates, the fat was a cherished
thing, as were the pelts and hides of the animals that
were used by the people.......but it is true that once
the temp drops low enough, you can hang a deer
carcass in a tree and it will keep for weeks.......

And when our ancestors began herding sheep, goats,
and cattle, they thinned the herds every Fall, keeping
the best of the female animals and a male or two to
replenish the herds in the Spring........again, I'm talking
about cold climates.....warm climates, you just moved
your herd along to the next fertile area.....but in cold
climates, hay had to be collected to feed the breeding
stock over the winter..........

Many of these old customs survive in our modern
traditions today......we just don't think about them,
or the reasons behind them........like eggs being
symbols of rebirth and life in the Spring.....eggs
are handy little snack food items.....rich in nutrients,
can be carried along with a little care, and most
wild bird eggs are colorful.....which is one reason
Easter eggs are dyed in so many colors....to
resemble the wild bird eggs...........our ancestors
had no problem with eating the embryos inside
the eggshells either........which I would probably
barf before doing............
