How about "Cooked Fat"?

If you come over here to see the Grand Canyon;  You may be
invited to a "Barbecue"!

This is a meal cooked on a wire grill just above hot coals.
Unfortunately  Many  Americans cook a piece of meat over
very hot coals so that there is a layer of "BLACK"  burnt
meat and fat on the "Steak".   You of course understand that
the completely burnt  molecules that have changed to carbon
or charcoal are harmless to the gut.   However  I  have read
many  statements that the "partially '  burnt fats
surrounding the black stuff contain a variety of chemical
compounds that are bad for the gut.
