Have you forgotten that Ray is a diabetic who required insulin
supplementation before starting the diet?  It is well known that
insulin-dependent diabetics may find it impossible to gain
weight, regardless of calories, but their experience cannot be
generalized to the rest of us.  Remember, in a non-diabetic,
protein stimulates nearly as much insulin release as
carbohydrate, so there is always enough insulin available to
signal cells to store fat.
