Sorry, I have lost track of whose response this is:

Some salient points:

Crohn's and ankylosing spondylitis are autoimmune diseases, along with
numerous other conditions such as psoriasis, multiple sclerosis, Lupus,
rheumatoid arthritis, ulcerative colitis, and many others.

Celiac disease is also an autoimmune disease, and people with CD are much
more prone to develop any other (or several) autoimmune diseases then the
(unaffected) general population.

In the vast majority of cases of CD, strict adherence to a gluten free diet
will result in amelioration of symptoms and complete resolution of the
condition, including healing of damaged intestines. Frequently, other
accompanying autoimmune conditions resolve as well.

A very low carb diet, by definition, would virtually eliminate all grains,
and therefore all gluten.

Conclusion: Many people are unknowingly but effectively treating undiagnosed
Celiac disease by eating a very low carb and/or Paleo type diet.
