Beef brains! Yum!  Lucky you! I bet lamb brains are even better!
Eat them raw if you are very brave.
I tried, but couldn't- not because of the taste- which is quite mild-
but
the consistency was something I couldn't quite handle.
Saute them or boil in beef broth- plain or with garlic and/or onions.
Ground meat is good to toss in too. I mix them with eggs for the
squeamish-
they scramble together nicely.

I never tried eyeballs, but would if I had the chance. I have heard
they
are quite the delicacy!
