Rick,
I've chopped and boiled them with some chopped onion and a little vinegar -
out on Paleo, but you could try lemon or lime juice.  The young, tender
ones are best.  I noticed some cactus recipes in a recent issue of Texas
Highways.  I'll try to find them tonight.
