clelia  have you tried verjuice?  this is the juice made by squashing
grapes
before they are ripe, before their acids have begun to condense to
sugars.
i make it most years;  if you give me your mailing address i'll send
you a
sample.

altho i say grapes, it is also made from unripe plums and other fruits
in
central europe north of the grapeline.  you don't need to sterilise or
preserve verjuice, it is too acid for acetobacter to attack it.

The Romans thought it superior to vinegar for their cookery.   geoff
