You might note that they say antioxidents and other nutrients are
useful, and they are trying to find wheat strains that have higher
levels. They do not say that wheat is actually better than some other
high antioxidant food, simply that antioxidants are good.

I guess eating whole wheat is better for you than eating pure junk
food, which is probably why they find that diets with whole wheat are
healthier. Most people eat so much junk food that replacing some of it
with whole wheat bread is an improvement.
