Well, I haven't gone as far as Eric, but I've responded to an idea on the
list and store my previously frozen grass-fed meat on open plates in the
fridge. The longer it sits the more flavorful and sweet it becomes - but it
tastes so good I haven't had any for longer than a week! Gotta work up my
nerve to keep it under the house...
