Inspired by Rachel's idea to try a new food each week, today I
bought some celery root and made it for dinner, along with a pork
roast.  To my knowledge, I've never had this stuff before.

For those who haven't used it, celery root is roughly round,
about the size of grapefruit, and ugly, with rough skin and
wormlike root processes.  The feel is firm but somewhat rubbery,
in the raw state.

Not knowing what to do with these suckers, I peeled them, cut
them into pieces, and boiled them until tender.  Then I mashed
them and served them with a little butter, like mashed potatoes.
In fact, they are a fair paleo substitute for mashed potatoes,
with a mild taste.  There is a slight tang, like parsnips, but
much less intrusive.  My son ate them without complaint or
comment.
