Buckwheat is very much edible raw from the sprout stage ( the 2 1st leaves)
to the seed stage. all parts are edible leaves,  flowers and seeds ( seeds
have the inconvenience that you have to spit out the shell,that is fibrous
if green or woody when getting mature, . but the taste is worth it). the
sprouts grown on little bit of earth are very delicious greens.
