I personally use a fair amount of honey when I desire it.  I have found that
in my body there is a significant difference between honey that has been
heated and honey that has *never* been heated.  Cooked honey is like eating
straight sugar for me.  Raw honey tastes better and I never get the
"jitters" afterwards even when I eat a large quantity.  One has to be
careful though because "raw" honey in the health food store is allowed to be
heated, but just not to 160 degrees F.  Truly raw honey has *never* been
heated.

I would also like to say that honey is clearly a carbohydrate food and if
you eat enough of it you will gain weight and go out of ketosis pretty
quick.  I try to only eat it in the summertime when it would be naturally
available.
