I'm basing it on your claim that you eat 3.5 to 4 lbs. of meat.
Assuming leaner meats, this would come to close to 4,000 kcal (an
average for meats is about 1,000 kcal/lb.).

I'm just guessing, but this looks to me to come to about 90g of
utilizable carbs.  Rounding it up to 100 for simplicity, then
that's 400 kcal from carbs, or 10% of your daily energy.

Incidentally, even though I'm significantly larger than you, I
gain fat like crazy eating this way.  I tried it.  But I only
work out two times a week.  That would explain it in part, but I
also suspect that there is a major metabolic difference between
us.
