If we are going to cheat a little on the soy sauce, we should at least do
it right. I recommend Eden Organic Tamari Soy Sauce Traditionally Brewed
(Imported). The ingredients are: water, organic soybeans, sea salt.

It says "Koji inoculated soybeans are aged for two years allowing natural
enzymes and patient tending to create..." and "Its flavor will remind you
of miso and is more pronounced than that of shoyu." So we should be able to
use less.
