Another mashed potato substitute that I like is blended cauliflower
and nut butter.  My recipe is (more or less) cauliflower, pine nuts or
cashews, dash of lemon juice, roast garlic, thyme.

I made this with thanksgiving dinner last year, and it well
appreciated,
even by my non-paleo friends.
