does

cream?) Do I
just make a puree of mango and coconut milk, then freeze it? The best
mangoes are too expensive to experiment with, and the cheap ones are
 unpalatable IMO.

the icecream freezer whips air into the mixture while freezing
it...making it
lighter & more voluminous.
if you just make a puree and freeze it, you will a coconut-mango
block- like
a popsicle. You could freeze it till almost solid, take out of
freezer, whir
it in food
processor or blender and then refreeze. it will still be somewhat
hard,
though.
you might look up some granita recipes and follow that technique.
granitas
are kind of like shaved ice. you freeze your concoction and then
scrape it to
create particles to eat. would be good with some larger bits of fruit
intact
in mixture.
