I've been following the posts on obtaining range fed cattle and
sugar-free bacon.  Don't forget your local small farmers/ranchers.
You can purchase beef on the hoof which is grass fed only and have it
butchered to your specifications.  Many small farmers never feed their
cows grain until a few weeks before they go to market. The beef is
very lean and usually needs fat added for cooking.  Just ask the
butcher to save the visceral fat.  Even lean critters have a good
amount of fat stored in the belly. A good contact source for small
farm produce is your state's Farmers Bulletin issued by the Dept. of
Agriculture.  There are lots of small farmers losing money when they
take their grain fed cattle to market.  Maybe we need to educate them
that there is another group of consumers out here they can provide.
After all it is cheaper for them to produce grass fed cows.  All the
hormones they pump into the feed grain increases the price.
The local grocery stores ususally carry fresh side pork or what we
call in the south - fat back.  This is basically fresh cut bacon (no
additives).  You can also purchase salt pork which is served sliced
like bacon for breakfast (verrry salty - no sugar).
