Two reasons we don't eat much legume. One is most legumes are
poisonous, even the ones we can eat contain poisons but at low doses.

The other is that legumes begin showing up associated with human
remains only ten or so thousand years ago. Before that there are no
signs in the archeological record that humans ate legumes.
