Here's a nice website: http://www.ag.uiuc.edu/~food-lab/nat/  It looks like
an online browser of the USDA handbook data.  I checked "yam" and it has
the same error in Vitamin A that has been perpetuated through all the
editions.  Check it out.  No minerals or fatty acids, but %protein, carb,
fat, and some vitamins.
