Hi Maddalena

Canadian too, although I haven't posted to the list in a very long time.

Thanksgiving...some suggestions:

Fresh free range turkey, smoked on a wood fire or baked, stuffed with a
mixture of ground almonds, sage, onion or whatever you like
A compote of nuts...chestnuts, walnuts, hazelnuts or whatever, simmered for
a short while in meat stock, throw in a handful of dried cranberries when
almost done
Greens, any kind, spinach, rapini, swiss chard, collards, dandelions, kale
sautéed in olive oil and garlic with a few pine nuts
Onions, roasted whole on the fire with the turkey for the last 45 minutes or
so
Apples stuffed with chopped dried figs, dates, raisins and apricots and
baked for dessert
