i have said it before . cashews are edible in their raw state , really raw .
raw cashews are not commercialised except by the instincto coop in France or
more recently by a raw american company .
i have cashews in the shell here and i open them for my children using a
pipe cutter.( it can be done also with a simple knife ). neither i or my
childrens had any reaction touching a little bit of the oil .In india i
learned that children bury them to harvest them after the first rains
,sprouted .
commercial cashews are awfull because of the process of extraction (
chemical solvants and high heat ) and are also grown with help of DDT.i was
in the region of production in kerala and the natural farm i visited told
me what was going on in the surounding fields and the processing plant .
i ate his cashews fresh from the tree ( fruit and nut ) and they are grown
easelly without chemicals in the context of a natural farm . his farm was an
oasis in the middle of a desert where only cashews and coconuts on bare
white sand could grow .( even the weeds where not there .his soil had a
layer of humus and a multistory vegetation.
so yes cashews are paleo but unless you can have access to in shell ones or
at least really raw i will not recommend using them too much .
a really raw cashew have its skin on .
