The thing is, this isn't at all new information!  Anyone who has actually studied human skeletal remains know that grain-based diets lead to more cavities/dental caries whereas a protein-based diet leads to more plaque/calculus.  The fun bit is with the advances in studies in DNA and stable-isotopes has allowed for more knowledge of diets and studying what is found within the dental calculus.

And what is up with linking heart disease and arthritis to diet?  No one actually knows the reason for arthritis in its many forms - arthritis is found in agrarian societies in about the same levels as hunter-gatherer societies!
