I was a strict vegetarian for 13 years.  I changed over by starting with
canned tuna and crab.  Then moved ahead with other kinds of fish.  Then
ground beef.  After that, all other meats had to be slow cooked in a crock
pot, falling apart tender before I could eat it.  That was about a 2 month
process.  It seemed I could eat it when there wasn't a heavy odor of meat in
the house.  This was just the process of change, adjusting to new smells,
tastes and textures.  What surprised me at the time was that the meat I
remembered liking as a child (Danish sausages) were too spicy and I couldn't
eat them!  For me, it had to be gradual.
