I'm fortunate enough to live close to Sunrise Farm (Loveland, CO).  They raise
organic beef, pork, lamb, chicken, and turkey.  I buy a side of pork and ask
for the
fat scraps which I render into lard.  There are lots of organic vegetable
farms, but organic pork is pretty rare.
