Greetings,
Speaking as a person that eats everything raw of late I can honestly say
that I would cook every last morsel too if I felt it was healthier.  The
reason for me is simple: warm food.

I can imagine that folks living in that climate would prefer that their
food be warm and indeed cooking makes food softer to chew in many cases.
Both are advantages in freezing weather.

The real question though is how did folks do things on an overall basis?
One cannot simply use one small group to determine the habits of an
entire species at a particular point in time.  Clearly life did not
originate in the cold places.  One needs to look further south IMHO.
