The last time I made pemmican, I used nothing fancier than a
slotted spoon.  There's nothing in the tallow that's going to
hurt you; it's just a matter of getting rid of debris from the
suet rind.  A sieve should be okay.  For people who don't have
one, cheesecloth is cheaper, if you can find it.
