Not really an answer to your question, but I just buy hamburger and dry it
in an electric food drier at 90 degrees. Works fine, more like jerky than
pemmican. I suppose I could add more fat and call it pemmican. Takes about a
day to dry at that temp. So basically I am eating raw meat and fat, but it
doesn't taste raw.
