American Indian & Minority Health, Inc. (non-profit status pending) is an education organization based in Tulsa, Oklahoma. AIMHI works to obtain, distribute and document the benefits of returning to traditional diets of our ancestors of all minority peoples to return to a healthier lifestyle of our ancestors who did not suffer from such diseases as diabetes, cardiovascular disease, etc. Because diabetes numbers began to rise in such tribes as the Pima shortly after the introduction to government commodities, one of the goals of AIMHI is to launch studies that will document the detriment of refined, carbohydrates provided by the Federal Food Program and provide a list of alternative, more healthy foods for those genetically prone to getting diabetes and its related diseases. Currently, many minority groups in isolated areas of the United States, as well as, many reservation tribes are totally reliant upon the commodities program as a means to survival. Currently, commodities do not have fresh, green vegetables, raw nuts or other healthy proteins available on a consistent basis. The availability of "healthy fats" are almost obsolete.
