It should not be a problem.  The saturated fatty acids that may be
problematic for insulin resistance appear to be palmitic acid and
myristic acid.  These are not that high in coconut oil, I think (but I
should check, I guess).  When glucose is converted to fat in a mammal's
body, it is almost all palmitic acid.
