I came across a posting from September that inferred that many paleos
don’t eat organ meats.
Well, I must be an exception. I enjoy many organ meats: Chicken livers,
Sweetbreads (sheep’s), Beef Tongue, heart, and kidneys, and once had a
dish of “Rocky Mountain oysters”, that was ok but not one I’d repeat.
I’m not that fond of beef or calves liver (still eat it on occasion),
but enjoy chicken livers several times a week. Good for minerals. I
don’t tend to eat these raw, but not well done either. Marinated in
olive oil, fresh squeezed orange juice, and lots of garlic….yum! There
are some very good recipes for organ meats in the book “Nourishing
Traditions”..just leave out the non paleo stuff. For instance they
suggest soaking sweetbreads in milk overnight, but soaking in another
liquid like salted water or fruit juice accomplishes the same purpose.
Or perhaps use raw milk for this process if you are not against it.
“Variety Meats” add a lot of good nutrients to the paleo diet.

Typical daily menu:
Breakfast – my beloved generous green salad with tuna, sometimes canned,
sometimes thin sliced raw ahi.
Lunch – a whole avocado and a handful of raw almonds, or pemmican, or a
hardboiled egg or two.
Dinner – meat or game barely seared, organ meats, or roasted poultry, or
fish other than tuna (love fresh caught trout!) and a small bowl of
fresh low glycemic fruit in season. Particularly fond of melons, and
kiwis or other berries, but since we have a small orchard of rome beauty
apples, these are eaten seasonally as well. Other fruits used: valencia
oranges in marinades, lime or meyer lemon juice from our bush in salads.
I still prefer black tea to green, but I only drink two cups in the
morning and drink water or mineral water the rest of the day as a beverage.
My only food concession to non-paleo is that I sometimes add organic or
raw unsalted butter to meals in small amounts when cooking, otherwise
olive oil and flaxseed oil (in salad) are the non-meat fats used. I take
flaxseed oil as a supplement because I don’t digest fish oil capsules
very well.
