You can go to the Center for Disease Control (CDC) website and do a search
on trichinosis.  There is information to the effect that improved feeding
practices (no longer allowing pigs to be fed garbage)  have dramatically
reduced the incidence of trichinosis.  Also, freezing pork less than 6"
thick for 21 days effectively destroys any presence of trichinosis.
