Mary, all I can do here is tell you my experience with gallstones.  I have a
lot of them.  A lot.  Before I went on a low carb diet to lose weight, I was
having pain and was considering having the darned thing removed.  I even had
an appointment set up to see the surgeon.  Then I decided to start the
Atkins diet, as recommended by my cardiologist.  I never had another twinge,
and that has been 2 and a half years ago.  I figure if it ain't broke, don't
fix it.  I eat plenty of fat and red meat.  I lost nearly 50 pounds and am
off all cardio meds and have been for over a year.  Triglycerides are at 69
and blood glucose was at 70.  I wish I could remember my cholesterol
numbers, but the hdl/ldl ratio is under 4 which is where my low carb
supporting doc says it should be.

My only suggestion is for you to try to give him plenty of LC choices, and
stick to that for a while and see what happens.  My DH, the former Snicker
King and #1 supporter of Blue Bell Ice Cream is now basically following a
low carb lifestyle because I got him to read Dr's Eades Protein Power
Lifeplan.  He swears by their ideas.  Once he read it, it became HIS idea to
do it, and that was that.
