It is definitely not as easy as this.  The human has gut associated lymphoid tissue(GALT) that takes up "foreign" proteins into the body, on purpose.  This GALT is called a peyer's patch.  It is made up of M cells (and epithelials) that actually takes up gut contents and processes it to determine if there is pathogens present with in the gut.  Somehow it discounts food and only is suppose to activate against pathogens.  Most likely this is do to associated bacterial products; LPS, PG etc.  When these M cells discover antigen or become infected themselves there is an increase in gut permeability.  This is because neutrophils are attracted by the secretion of cytokines and force the tight junctions(between epithelials) apart to get at the pathogens within the gut.

Anways, everyone takes up "foreign" proteins.

Not sure whether, when say a sufficient amount of wheat to cause a leaky gut is consumed, "clean" beef protein will breach the gaps and cause autoimmune issues.
