Hi Brenda, 
Thank you for your articulate response. I was puzzling out how I wanted to
respond to it and your post is right on the money. My religious beliefs do
not preclude embracing evolution. Nonetheless, there is clearly some
confusion about the definition of the term "theory" as it appears in the
"theory of evolution" etc. 
Here is a relevant paragraph from the book I am currently writing:

Whether you credit evolution or God, or some combination thereof, each  of
us is a unique slurry of genes and traits that are highly adapted to the
environment in which our forebears either evolved over thousands and tens of
thousands of years or were created to best help them to survive. That those
genes are highly adapted is demonstrated by the fact that you are alive and
reading this book. (Some of us might even argue that the specific book you
are reading is also a testament to your excellent taste.) It is equally true
that we are not well adapted to the current dietary life-ways of our western
world. It is in the collision between the elegant adaptations passed on from
our ancestors with the scientific inventions and social constructions that
now shape this insidious new world of affluence, dietary indulgences, and
unsustainable dietary/food production practices that serve our hedonistic
demands while decimating the environment in which we live.

The working title has changed (again) to "Finding YOUR Optimal Foodprint" 

While I have some difficulty with both sides of the argument, I think that
polemics do not serve any of us.
