Ken, if you have a reference handy for these statements, I would be one very
happy woman.

You know, the truth *is* in the medical books, just that no one looks at it.
They know that triglycerides are one of the most atherogenic components of
cholesterol. They know that one of the major causes of elevated
triglycerides is a high carbohydrate diet. They know that vegetarians tend
to have low levels of HDL, the cholesterol that scavenges fats deposited in
atherosclerosis and returns it to the liver where it is excreted. They know
that a low fat diet rarely lowers LDL cholesterol, the stuff that gets
deposited. But no one seems to be putting all this together.
