If I recall correctly (probably incorrectly :-), in "Stalking the Wild
Asparagus", Euell Gibbons has recipes for 'possom, groundhog, turtle,
squirrel, muskrat, etc.  Being a thrifty forager, I believe he
includes
the "innards" in his stews and brews.
