James-- In Ronald S. Citron and Kathye J. Citron's Dr. Citron's
Evolutionary Diet, the following table appears:

Type of Wild Meat       % Fat Calories

Pheasant (skinless)     24
Venison                 18
Elk                     12
Moose                    7
Frogs' Legs              4
Ostrich                 18

The U.S.Department of Agriculture has an enormous data base (available
on-line) on the nutrtional content of tens of thousands of foods.  The
Citron's site the USDA Agricultural Handbook COMPOSITION OF FOODS: LAMB,
VEAL, & GAME PRODUCTS (1989) as their source for this table.  In New
England, where moose is common, moose has a reputation for being an
extremely lean meat.
