It is possible to not have the meat affecting  the fat,  if rendered very
very slowly ( just above melting point . the fat will rise above the juices
but if rendered at high temperature,  the juices will caramelise giving a
yellowish to brownish color ( depending on the ratio of burned meats to
fat )  and an  aromatic taste ( that is very addictive and unhealthy) to the
fat .
