Actually, cooking certain vegetables makes the carbohydrates (sugar) more
absorbable.  An example of this is carrots -- raw carrots do not effect
insulin levels as much as cooked carrots.  Also, removing the fiber of
veggies makes their sugar more easily absorbable ie juicing.
