Are there any studies done in non-controlled diabetics? I am a little bit
scared to try this given the fact that my diabetes is still not controlled.
Although, they aren't controlled eating Paleo, either.  I suspect something
else is going on?

No studies that I know of. I just know how it worked for my wife and I. Also
a couple of other people. My wife was borderline diabetic and her blood
sugar did the same thing mine did. I know of one person that went off
insulin. These are just anecdotes though.............  If you try it make
sure you monitor your blood sugar level cause you could drop very quickly. 
It may be the missing piece for you, I don't know.
